This caramel chocolate pecan pie is so delicious and super rich (seriously don’t cut yourself a big slice). It’s a super easy pie to make and is perfect for any holiday. In our family, we’ve had it every Thanksgiving for as long as I can remember (and we call it Turtle Pie- like the turtle candies), but it’s excellent for any holiday, and so hard to mess up! The original recipe is by Kraft and is on this scrap of paper we have at our house that is ancient, Kraft has a very similar recipe out now that you can find here.
Ingredients:
3 cups finely chopped pecans (divided)
1/4 cup sugar
1/4 cup butter, melted
1 package (11-14 oz) caramels
2/3 cup milk (divided)
1 1/4 cups of chocolate chips
1/4 cup powdered sugar
1/2 tsp vanilla
Directions
CRUST:
- Preheat oven to 350 degrees F.
- Finely chop pecans- you can use a knife, but a food processor is much easier.
- Mix 2 cups of the pecans, sugar, and butter. Press into the bottom and sides of a 9-inch pie plate.
- Bake 12-15 minutes or until lightly browned. Let cool.
FILLING:
- Melt caramels with 1/3 cups of milk in a saucepan over low heat, stirring frequently. (Or I just do it in the microwave on high for 2-3 minutes, stirring every minute.) Pour caramel over crust.
- Sprinkle caramel with the remaining cup of chopped pecans.
- Melt chocolate with 1/3 cup of milk, powdered sugar, and vanilla the same way as above.
- Pour chocolate over previous layer of pecans.
- (I like to top with a few whole pecans as shown in the pics.)
- Refrigerate and serve chilled with whipped cream or my preferred way- with vanilla ice cream.
